Food Services/Commissary Director

Responsibilities:

  • Reports directly to the Resident Camp Director and/or professional staff advisor.
  • Direct, supervise, and be responsible for the effective organization and operation of the camp kitchen/commissary and food services staff in accordance with the BSA National Camp Accreditation Standards (NCAP).
  • Responsible for the control of all kitchen material, equipment, and food supplies; record keeping, inventory, ordering, preparation, serving or distribution of all meals for the camp staff and campers; cleanliness, health and safety of all kitchen areas inside and outside the commissary as well as with the kitchen staff members.
  • Must live on-site and hold no other jobs or responsibilities for the duration of the season.

Position Description:

  • Provide daily nutritious meals for campers and staff.
  • Maintain an ample stock of food to prepare each meal.
  • Keep accurate records of food supplies ordered, stocks used, and remaining inventories on a weekly basis, to include number of meals served for each type of meal.
  • Order all food stock with the budgetary approval of the camp director or professional staff advisor.
  • Supervise and schedule all kitchen and food services staff.
  • Ensure delivery of jamboree-style food to the required sites is made accurately and on time.
  • Work with the commissioner staff to be sure that jamboree-style patrols are receiving the proper portions at each meal.
  • Ensure all equipment checked out of the kitchen by a troop is recorded and then returned in a clean and reusable condition and then stored properly for reissue.
  • Make sure staff who are remaining in camp on the weekend (Saturday lunch and dinner; Sunday breakfast) have plenty of food available.
  • Maintain a high degree of cleanliness in all areas of responsibility and personal cleanliness amongst the entire staff.
  • Perform other related duties and responsibilities as assigned by the Resident Camp Director.
